Just Right Kimchi

I love kimchi. I love kimchi so much I want to eat it all the time. To avoid a hole in my stomach from spice or a hole in my wallet from buying the great Mama O's, I decided to make some flavorful but mild kimchi in my Harsch crock. I freestyled the recipe, I'll report back on the results.
